As the mass begins to melt, the intensely sweet juice begins to melt, first leaving behind water. We diligently taste as the juice runs join with some of the water, usually over a three day period. Once the desired sweetness, flavor and acid profile have been achieved, we begin the fermentation process. In most cases, the starting juice is at 35 Brix or higher. The wine is fermented in stainless steel and bottled in the spring of the following year.

This vintage has stunning aromatics with notes of lychee, rambutan, ginseng , lemon grass, golden hay, kefir lime, meringue/pavlova, tangerine, honey, passion fruit, white florals. He proved it. Ponzi created America's first commercial Pinot Gris — LIVE Certified, estate-grown, own-rooted vines that are now among Oregon's oldest. White florals, ripe stone fruit, a whisper of grapefruit: aromatic, textured and chiseled, with the balance that makes it as natural opening a meal as carrying it through to the last glass.
