In the vineyard

The 2020 growing season was exceptional for sparkling. A cool, dry spring led to lower fruit set and smaller clusters — naturally concentrated, with the structure sparkling wine demands. A warm summer followed, building ripeness without sacrificing acidity. Fruit was harvested late August through early September, picked precisely for the tension that defines Ponzi Brut Rosé.

IN THE CELLAR

Grapes were hand-sorted and whole-cluster pressed without sulfur addition, then settled in tank for one day before splitting: 34% moved to neutral French oak for 8 months, the remainder to stainless steel, both fermented and aged separately at cool temperatures with wild yeast. No malolactic fermentation. The two lots were kept apart through fermentation and aging — barrel for structure, tank for precision — before coming together as one wine.
